I'm absolutely in love with this banana bread recipe! My obsession with banana bread and chocolate was totally satisfied with this one! It tastes delicious, especially when fresh out of the oven, with the warm, gooey chocolate melting inside, and it's also highly nutritious with some special additions I added such as quinoa.
Chocolate Banana Bread
Dairy-free, egg-free, refined sugar-free
Yield: approx. 6 servings
Prep Time: 10 mins
Bake Time: 40 - 45 mins
Total Time: 50 - 55 mins
Ingredients:
About 3 medium or 2 large ripe bananas, mashed
2/3 cup maple syrup
1/4 cup plant milk
2 tablespoon refined coconut oil or avocado oil
2 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup cooked quinoa
1/2 cup dairy-free dark chocolate chips or chunks
Directions:
Preheat oven to 350 F and line an 8" by 4" loaf pan with parchment paper.
In a large bowl, combine mashed banana, syrup, plant milk, oil, and vanilla, whisking until smooth.
In a medium-sized bowl, whisk in flour, baking soda, cinnamon, and salt until combined.
With a spatula, fold the dry ingredients into the wet ingredients until just combined.
Now fold in the quinoa and chocolate until evenly mixed in.
Transfer batter to the prepared loaf pan and bake until the top is golden and a toothpick inserted into the center comes out clean, 40 to 45 minutes. Let cool for 10 minutes before removing from the pan.
Slice the loaf into smaller pieces and enjoy with a cup of tea or a glass of milk!
