This girl is still obsessed with chocolate! Here's a super yummy double chocolate granola recipe!
Dark Chocolate Granola
Dairy-free, refined sugar-free
Yield: 9 servings

Ingredients:
2 cups old-fashioned rolled oats
½ cup raw pumpkin seeds
½ cup raw sunflower seeds
½ cup raw walnuts
½ cup raw pecans
⅓ cup unsweetened cacao powder
¼ cup unsweetened shredded coconut
2 Tbsp chia seeds
½ tsp salt
½ cup maple syrup
¼ cup refined melted coconut oil
1 tsp pure vanilla extract
½ cup dairy-free dark chocolate, roughly chopped
¼ cup dried goji berries
Directions:
Preheat the oven to 340 F and line a baking tray with parchment paper.
In a food processor, add the oats, pumpkin and sunflower seeds, walnuts, pecans, cacao, coconut, chia seeds, and salt. Pulse to roughly chop.
Remove the blade from the food processor, or transfer the contents to a large mixing bowl.
Add the maple syrup, melted coconut oil, and vanilla extract to the granola and mix thoroughly using a spatula.
Transfer the mixture to the baking tray and spread it out evenly to cover the whole tray.
Place in the oven for around 20 minutes, stirring halfway to ensure the granola is evenly baked.
Remove from the oven and allow the granola to cool.
While it’s cooling, stir in the dark chocolate and goji berries.
Enjoy this delicious chocolate granola with milk, yogurt, or just by itself! Store it in an airtight container, in a cool and dry place, for up to a month.
