Vegan Chocolate Cake

You'll be surprised at how flavorful this vegan chocolate cake is, and even more surprised that it is sugar-free! The sweetness of this cake comes from natural sweeteners: dates and apples. This cake is a healthy alternative to enjoy on any occasion, whether it be for a birthday, holiday party, family gathering, or just a fun treat!

Vegan Chocolate Cake

Dairy-free, refined sugar-free

Yield: approx. 8 servings

Total Time: 1 hr


Ingredients:

Cake -

  • 1 cup dairy-free dark chocolate, chopped

  • 1 1/4 cup plant milk

  • 3/4 cup unsweetened applesauce, or 1 large honeycrisp apple blended in a food processor

  • 2/3 cup pitted medjool dates

  • 2 tbsp date syrup

  • 1 1/2 tsp vanilla extract

  • 1 1/2 cup baking flour

  • 3 tbsp unsweetened cacao powder

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

Frosting -

Toppings -

  • strawberries or raspberries

  • 1/2 cup dairy-free dark chocolate, melted into a syrupy form

  • shredded dried coconut

Directions:

  1. Preheat the oven to 350 F.

  2. Cover the bottom of a 9-inch round cake pan w/ parchment paper. Cut another strip of parchment paper to fit along the sides of the inside of the pan. Hold the strip in place with a clip and set aside.

  3. Melt the dark chocolate in the top of a double boiler placed over simmering water, stirring occasionally until smooth. Set aside to cool.

  4. In a blender, combine the plant milk, applesauce/apple, dates, date syrup, and vanilla extract and blend until smooth.

  5. In a large mixing bowl, whisk together the flour, cacao powder, baking powder, baking soda, and salt.

  6. Pour the liquid mixture into the bowl and stir until evenly combined. Next, stir in the melted dark chocolate.

  7. Pour the batter into the cake pan and remove the clip.

  8. Bake in the oven for about 30 minutes. Once removed from the oven, test to see if the cake is ready by sticking a toothpick into the center. If it comes out with just a few crumbs clinging to it, then it is ready.

  9. Set aside to cool for a few minutes before removing the cake from the pan.

  10. Place on a serving dish and top with frosting, fruit, and chocolate syrup. (The frosting and toppings listed in the ingredients are just what I personally love to put on my cake. But feel free to be creative and top with whatever you desire!)
